On the second day of Christmas, my true love gave to me two edible cookie baskets and a fairy for the top of my tree.
Follow along as my girls and I make the cutest edible cookie baskets. I had this recipe in an old cookbook and thought I’d try it out and use them for teacher gifts this year.
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 4 tablespoons butter (1/2 stick), softened
- 1 egg
- 2/3 cup sugar
- 1/2 teaspoon vanilla extract
I doubled this recipe to make two baskets.
*Combine flour, cocoa powder, and salt in a medium bowl. Stir together and set aside.
*In a mixing bowl, combine butter (softened), egg, sugar, and vanilla using an electric mixer. Slowly mix in the flour/cocoa mixture until thoroughly combined.
*Cover the outside of your loaf pan with aluminum foil.
*Cover your work area with flour, and roll out the dough to 1/8″ thick.
*You can use any shape cookie cutter though something that is round or heart-shaped works best. (We used a round cutter with scalloped edges.) Cut several cookies from the rolled out dough.
*Cover the bottom of the loaf pan with the cut cookies, slightly layering them as you go.
Ready to put them in the oven!
*Bake at 350 degrees for about 30 minutes.
* Remove from the oven and allow to completely cool before removing the cookie basket from the loaf pan.
And finally, fill up the basket with goodies!
